Cooking is both addictive and therapeutic. Even though looking after two kids can get crazy on some days, I love using some days to make or cook things that are not on my every day menu.
After the success of my no bake Nutella cheesecake, I decided to try and come out with my own no bake recipe. First up, no bake Oreo cheesecake.
7 digestive biscuits
24 Oreo cookies
500g cream cheese (at room temperature)
125g unsalted butter (soft)
1/4 cup icing sugar
Put the 7 digestive biscuits and 6 Oreo cookies into a plastic bag and smash them into fine crumbs.
Put the smashed digestive biscuits, cookies and butter into a mixer and mix them together until they are thoroughly and evenly mixed.
Pour the mixture into an 8 inch round springform baking tin. Press the mixture into the base of the baking tin either using your hands or the back of a spoon. Place in the fridge to chill.
Put 6 Oreo cookies into a plastic bag and smash them into powder form.
Cut 8 Oreo cookies into quarters.
Put 250g of cream cheese and half of the powdered Oreo cookies into the mixer and mix until smooth.
Add another 250g of cream cheese, the remaining powdered Oreo cookies and 1/4 cup of icing sugar into the mixer and mix until smooth.
Add the quartered Oreo cookies into the mixture and mix thoroughly.
Pour the mixture into the tin with the pressed biscuits base.
Level the mixture evenly.
Cover the baking tin with cling wrap and put the cheesecake into the fridge to chill for at least 4 hours.
The last 4 Oreo cookies are used for decoration. Depending on how many slices you cut the cake into, decorate accordingly.
I cut my no bake Oreo cheesecake into 16 slices, so I cut the Oreo cookies into quarters and decorated the cake.
