Nutella Cheesecake – My Tweaked Version

A couple of weeks ago, I attempted the no-bake Nutella cheesecake recipe from Rasa Malaysia. The only thing I didn’t add was the nuts because I couldn’t find any in the supermarket at the time. While I generally liked the taste of how the cheesecake turned out, I found it a little too Nutella-ish and not cheesy enough. Yes, to me, there’s such a thing as too Nutella-ish. Haha…

I had a gathering with some friends yesterday and decided to use the opportunity to make the cheesecake again, only this time, I tweaked the recipe to suit my taste.

So here it is, my version of no-bake Nutella cheesecake:

Ingredients:
20 pieces of digestive biscuits
125g soft unsalted butter
13-oz Nutella (that’s basically a small jar of Nutella)
750g cream cheese (at room temperature)
½ cup icing sugar (sifted)

Method:

20140729-153906.jpg Put all 20 pieces of digestive biscuits into a ziplock bag and smash them into crumbs.

20140729-154030.jpg Put the smashed digestive biscuits, butter and 1 tablespoon of Nutella into a mixer and mix them together until they are thoroughly and evenly mixed.

20140729-154435.jpg Pour the mixture into a 23 cm/9-inch round springform baking tin.

20140729-154557.jpg Press the mixture into the base of the baking tin either using your hands or the back of a spoon.

20140729-155129.jpg Put 250g of cream cheese into the mixer.

20140729-155235.jpg Add 1/4 cup of sifted icing sugar.

20140729-155343.jpg Mix until smooth and pour the mixture into the tin with the pressed digestive biscuits base.

20140729-155742.jpg Put 500g of cream cheese, the rest of Nutella in the jar and 1/4 of sifted icing sugar into the mixer.

20140729-160404.jpg Cover the baking tin with cling wrap.

20140729-160449.jpg Put the cheesecake into the fridge and chill for at least 4 hours.

The gathering with my friends was on Monday, and I made the cheesecake on Sunday, so the cheesecake was chilled in the fridge overnight.

I definitely like this new version better because the extra layer of cream cheese balanced the Nutella better.

Of course, the way I tweaked the recipe was to suit my own taste, so others may or may not like my version.

I must say though, that I am loving no-bake recipes right now. When I have a young baby and a preschooler, I don’t always have a lot of time in the kitchen and no-bake recipes give me alternatives when I want to make dessert.

Someone recently shared a whole list of no-bake cheesecake recipes and I’m definitely going to try some of them.
